Apple cream cheese cupcakes

Finally here it is a new recipe. I am sorry that it took me so long. Bake it ,eat it,love it ♥


  • 2 cups All-purpose Flour
  • 1 teaspoon Cinnamon
  • ½ cups Sugar
  • 2 whole Apples,washed And Chopped
  • 1 cup Butter,soft
  • 2 whole Eggs
  • 2-⅞ ounces, weight Cream Cheese
  • 2-⅛ ounces, weight Soft Butter
  • 2 cups Confectioners Sugar
  • 1 teaspoon Lemon, Rind                                                                                                                               

    Preparation Instructions

    Heat the oven to 400ºF and line about 12 muffin cups with paper liners.
    Blend the butter and sugar in a large bowl,add the eggs and in a separate bowl mix the flour and cinnamon. Add the flour cinnamon mixture to the butter mixture and stir the batter until smooth. In the meantime wash,slice and chopp the apples. Stir the apples under the batter and spoon the batter into the muffin pan liners. Bake them for about 25-30 minutes. Take them out and let them cool for about 10 minutes.
    Then for the frosting beat cheese,butter and lemon rind in a small bowl,until light and fluffy. Gradually beat in sifted sugar and beat until smooth. This frosting keeps for 4-5 days,if you put it in the frige.
    So if you like you can put the frosting atop the cupcakes or you can put it in the frige. Either way it´s really yummy.
