Pumpkin Chocolate Chip Muffins
Just perfect for fall. And these pumpkin muffins are made even more delicious by the tiny chocolate chips nestled within. Ingredients: ⅓ cups Vegetable Oil 1 cup Pumpkin Puree 2 whole Eggs 1-¼ cup Sugar 1-½ cup All-purpose Flour 1 teaspoon Baking Powder ½ teaspoons Salt ½ teaspoons Baking Soda 2 teaspoons Pumpkin Pie Spice ½ cups Mini Chocolate Chips Preparation Instructions First preheat the oven to 350ºF and grease a muffin tin. Mix together the oil, pumpkin puree, eggs and sugar in a large bowl until well blended. In another bowl, whisk the flour, baking powder, salt, baking soda, and the pumpkin pie spice. Add this to the pumpkin mixture and whisk until just combined. Then fold in the chocolate chips. Spoon batter into prepared muffin tin and sprinkle a few more chips on top of the muffins. Bake for 25-35 minutes. Cool in the pan for about 5 minutes, then remove to a cooling rack.
